Cauliflower: the new kale!

It’s true! This amazing, versatile vegetable can be made into everything from pizza crust to hummus. It is rich in vitamins C, B and K, fibre, potassium and omega-3 fatty acids. Substitute it for the “bad” white foods (potatoes, rice) and make cauliflower mash, roasted cauliflower or cauliflower rice. You will wonder why you never thought of doing it before!
