Greek salad... with quinoa

The deliciousness of Greek salad with power packing quinoa. Great for dinner, or as a side for your next BBQ. If you want to make a big, crowd pleasing salad, you need: 

6 cups cooked and chilled red or white quinoa
2 cups chopped mixed bell peppers
1 cup chopped cucumber
1 cup pitted Kalamata olives
1/2 cup chopped Italian parsley
1/2 cup chopped red onion
1 cup grape tomatoes
2 teaspoons oregano
1/2 cup olive oil (more or less, depending on preference)
1/4 cup red wine vinegar (more or less, depending on preference)
8 ounces feta, crumbled 
1/2 cup chopped green onion 
2 teaspoons lemon juice
salt and pepper

optional: 1/2 cup chopped artichoke hearts
optional: 1/2 cup rinsed garbanzo beans

Combine ingredients and serve with chicken kebobs, hummus and pita, grilled prawns... and of course a cocktail; perhaps consider a Greek mojito
