Roasting tomatoes is a great way to boost their flavour and give your meal that extra BAM! Time in the oven intensifies their salty-sweet richness and just try to stop yourself topping salads, crostinis and pizzas with them. Don't stop there... use roasted tomatoes in your tomato sauce for pastas and who knows what else. Yummmmmmmmmmmmm.
Quarter the tomatoes (or in half if they are smaller), put them on a sheet pan, drizzle with olive oil, sprinkle with salt and pepper and toss them on the oven at 400 degrees F for 35 minutes.
