Tightwad is looking forward to seeing her kids' eye light up when they get home! Oatmeal, craisin, coconut and chocolate chip cookies... double batch of course!
Ingredients:
3/4 cup of butter
1 cup of brown sugar
2 eggs
1 teaspoon of vanilla extract
1 1/4 cups of flour (used whole wheat)
1 teaspoon of baking soda
3/4 teaspoon of cinnamon
1/2 teaspoon of salt
1/2 cup of coconut flaked
2 3/4 cup of rolled oats
1 cup of craisins
1/2 cup of chocolate chips
Preheat oven to 375 degrees F. In large bowl combine the butter, sugar, eggs and vanilla. Stir in the rest of the ingredients gradually. Drop by the teaspoon onto greased cookie sheets. One batch makes about 24 cookies. Bake for about 12 minutes or until golden brown. Cool and remove from rack.
Now in the oven: Tightwad's beef and black bean meatloaf with spinach and red onion. Yes, Tightwad is one of those crafty hide-the-healthy-stuff-in-food type moms.
