
Tightwad wasn't feeling too inspired to make last night's meal. Ground beef can sometimes leave you a little flat. Her solution? Meatloaf. But not just any meatloaf. Meatloaf augmented with mashed black beans. The result? A pretty delicious, tender meatloaf that was packed with protein, fibre and didn't break the bank - if she says so herself!
Ingredients + process:
Package of extra lean ground beef, one egg, one drained can of (mashed) black or kidney beans, one diced yellow onion, two cloves of minced garlic, dash of oregano, bread crumbs (Tightwad uses two pieces of toast, crumbled), half a cup of ketchup, a tablespoon of soy sauce, salt and pepper and you are good to go. It would be really good with some chopped, drained spinach, too. Combine all ingredients, top with a little tomato sauce or salsa, and put in oven at 375.
Tightwad has been serving everything with baby bok choy, which makes an awesome side to anything. Simply trim the ends, cut in half lengthwise and saute in a hot pan with some salted olive oil, minced white onion and a bit water to help it cook down (watch that the water doesn't dry up until everything is cooked; you may have to add some in the process).
