It's easier to separate egg whites from yolks if the eggs are cold, so leave them in the refrigerator until you are ready to crack them. A small funnel is a handy utensil for separating egg whites. Carefully open the egg over the funnel; the white will run through and the yolk will stay in the funnel. Time to bring on the hollandaise!
