
Last night was kind of chilly so BBQ didn't seem that appealing. Tightwad made a super easy dinner that turned out to be a real crowd pleaser and it had only a few ingredients. She roasted whole chicken breasts in the oven in a herbed tomato sauce, adding bread crumbs and grated cheese at the last minute to melt on top. When it came time to figure out what to serve it with apart from rice, she eyed up a zucchini in her fridge and decided to get adventurous. The result? Fried green zucchini! It was super easy:
1. Partially peel the zucchini to retain the green rind
2. Chop it into rounds, about 1/2" thick
3. Dip in egg
4. Coat in flour, salt and pepper mixture
5. Saute in hot butter
Next time Tightwad will add some cornmeal to the flour at probably a 50:50 ratio. She's happy to discover this option in light of zucchini season looming!
