What to do with that big bag of zucchini

Tightwad LOVES roasted vegetables - they are so versatile, easy to make, healthy and delicious. And they are a great way to use up bits 'n' bobs in your fridge. You can serve them as a side dish, in omelettes, on baguette, in quesadillas, in a quiche, on pizza, in a salad, in soups, with pasta, in lasagna - there's no end to what you can do. You can whip up a batch of roasted asparagus or red peppers, or mix and match with a combo of winter root vegetables with a lashing of olive oil, a little balsamic and salt and pepper.

Okay, I seriously did a little goosebump shiver thing when I saw that picture. I LOVE roasted and grilled veggies! I am terrible, because while I offer them to my kids, I don't force them to eat these veggies. I want there to be more for me!
