
Ingredients:
16 small new potatoes (skins on), 1/3 cup of mayonnaise (more according to taste), 1 tablespoon of grainy mustard, 1/3 of a small red onion finely chopped, 1/2 cup of crumbled bleu cheese (again, more according to taste), handful of fresh chopped chives, two finely diced cloves of garlic, squeeze of fresh lemon juice, dash of salt 'n' pepper, and about 1/3 cup of chopped crispy pancetta (optional).
Preparation:
Boil the new potatoes and set aside to cool. Dice the red onion and garlic, chop the chives. Once the potatoes are cooled, slice into bite sized pieces and put in a large bowl. Add the rest of the ingredients. Mix gently. Put into nice bowl and garnish with a few sprigs of chives. Save some room for your steak. Yum.

Is this a take on Walmart's red skin potato salad? I love that stuff. I'm going to try to make this after we get back from vacation.

What a combo! I love potato salad and I'm guessing I'm not as creative as I thought, because I would have never dreamed to add bleu cheese to it. Sounds de-lish. Definitely going to remember this one.
