
Tightwad found this fantastic idea on Super Healthy Kids. Amy at SHK has several awesome posts on getting your kids to eat their beans and this recipe will do it! Packing lots of protein, dietary fibre, maganese and folate, chickpeas are versatile, inexpensive and easy to sneak into lots of meals - but this is a recipe where the chickpea is actually the top star. Here is Amy's recipe.
Ingredients: can of chickpeas, 1/2 a white onion, a clove of garlic, an egg, a handful of fresh parsley, salt and pepper to taste, dash of cumin, a teaspoon of lemon juice, a cup of (whole wheat) breadcrumbs and a tablespoon of olive oil.
Directions: drain and rinse chickpeas, then mash them with a pastry blender or masher. In the food processor dice the onion and garlic. Combine with the seasoning, chopped parsley and lemon juice. Transfer to a large mixing bowl add enough of the breadcrumbs until the mixture is not to sticky. Shape your mixture into just the right shape for little hands to hold and fry them in the olive oil. Pair with some carrot sticks and some other nice kid friendly veggie and watch it disappear! Spud and sweetpea are going to love these.

I used to just eat them out of the can when I was a kid. Weird, I know.
Im gonna have to see if I can trick my kids into eating these! =)
