
Awesome Saturday night fare. To feed two people, you'll need 8 x 4-6" soft corn tortillas, a chicken breast, a lime, garlic (3-4 cloves), lettuce (iceberg or butter), avocados (2), thyme, cilantro, monterey cheese (about 1/2 cup, grated), hot sauce (chilupa or your fav.)
Make guacamole: mash two avocadoes, add diced garlic, squeeze of lime juice, salt 'n' pepper, diced cilantro (about one tablespoon, and some fresh thyme. Heat tortillas (wrap in foil and place in heated oven for about twenty minutes). Once the tortillas are warm, put heaping tablespoon of fresh guac on each, some shredded chicken (previously roasted and chilled) and top with shredded lettuce and cheese. Drizzle chilupa. Add some chopped cilantro to top it off. Would be good with some refried beans and a cervaza. Un poco mas por favor........
