
I have now made this salad two days in a row. I’ve actually had it three days in a row because we had it at a friend’s house on Saturday night (thanks Kirsten!). If eating the same thing on purpose isn't testament to how much I heart this salad, I don't know what is. This is definitely a contender for my menu planning Mondays, although it has seasonal ingredients that just aren’t budget friendly for a good part of the year. Here it is: butter lettuce, mango, avocado, cilantro, cucumber, garlic prawns or diced chicken breast (optional), dressing of lemon juice, olive oil, salt, pepper and minced garlic. Instructions: assemble stuff, mix with dressing. eat. AH.MAH.GAH. This is how summer tastes.

what are garlic prawns? I have all the ingredients except those. I have some left over chicken though. Seriously, I went to the supermarket and Hass Avacodos were on special, the mangoes were dirt cheap because it's the height of the season.
